Talk food, talk Asia
<p>Asia is a powerhouse, the continent known not just for the economy growth but also for eloquent and varied cuisine. Asian cuisine has so many vivid flavours to it that change from bland to spicy, from sautéed to richly garnish with thick curry. You travel to India to China to Malaysia or Korea, I bet you will find a new flavour at every street, serving plate of same dish but with different flavours.<br /> </p> <p>What do you think of when someone mentions Pan Asian Cuisine? Well, I think of burst of colourful flavours. Such is the beauty and popularity of Pan Asian cuisine that today wherever you go- New Delhi, New York or Tokyo, you will find it heading the menus everywhere. You will get at least 7 varieties of noodles from Miso, Soba to Udon and what not.<br /> </p> <p>Times were different when we were kids. The only noodle like thing that we knew was vermicelli, and they were meant to be eaten sweet. Good old vermicelli was cooked in its glory from grandma’s traditional vermicelli machines to mom’s kitchen to our plates.<br /> </p> <p>Times changed, geographies merged and the good old vermicelli found new flavours. I guess it was time to infuse some fusion cooking.<br /> </p> <p><strong>A twist in vermicelli’s tale</strong></p> <p>I took different elements of Asian cuisine and paired them together. I mixed Indian Seviyan with hot Chinese Schezwan sauce. To add a sweet crust and infuse Japanese Umami, I recreated my own version of Prawn Tempura and made it “Pineapple Tempura”. Yes, I encrusted the juicy pineapple in tempura batter and crisp fried it till it turned dawn gold in colour. Top it on the Schezwan vermicelli and you may have an Asian version of Spaghetti meatball oops, Vermicelli fruitballs.<br /> </p> <p>Interesting right? Well, that is Pan Asian Cuisine for you. A new adventure in every bite.
